How to Prevent Cracks on the Surface of Butter Cakes?

Visiting only starts on the 2nd day for my family so I stayed home and did some tutorial readings. That’s when my aunt, out of the blue, decided to bake something again. This time it’s butter cake.

The 1st attempt failed.

Being the goody niece (again), I spent my whole afternoon and evening helping her but the butter cakes did not turn out well. All 3 had “big cracks” on the top surface. Instead of a smooth and shiny surface, there were “big cracks” here and there, as though the butter cake exploded and the insides flowed out. I’m wondering if there is a way to bake perfect butter cakes minus those “big cracks”, please give some advice!

On something quite random, I did a check on an upcoming Swedish movie because I caught the sneak preview while I’m at Cathay Cineleisure. Heard of the movie, “Let the right one in“, before? From what I know, it’s a dark movie spun from a vampire fiction written by John Ajvide Lindqvist. The plot involves a boy and a female vampire and deals with the “darker side of humanity“. I’m unsure what its rating will be in Singapore but definitely not PG for sure. It should be out in Singapore by the 19th of February so stay tune for it!

    1) Bake in a water bath. Moist heat is good.
    2) Bake at lower temperatures for longer.
    3) Once egg enters the batter, don’t overbeat; just enough for it to get mixed in.

    Sounds like your oven is too hot. Try lowering the temperature and seeing if that clears up the cracks. There are other ways cakes can crack but this seems to be the most common.

    I heard about “Let The Right One In” on the Joe Vs. Ken podcast, which I found out about from my good buddy Chris Sims. Sounds really interesting and less “sparkly” than Twilight. I want to see it.

    I also saw “Slumdog Millionaire” which is one of the most uplifting films I have seen this year. It’s by Danny Boyle and it’s set in India. Will Baka-Raptor approve? Only time will tell!

    Your butter cake looks delicious even with the cracks. Judge a butter cake not by the cracks in its skin but the content of its calories!

    I know nothing about baking…
    I think that those still look pretty tasty tough.I wouldnt mind eating them

    Try tapping the cake tin on the counter top before baking it. Cracks are commonly caused by air bubbles trapped inside the batter. The air bubble expands during baking and cracks the cake top. So, to get rid of the bubbles, just kinda hold up the cake tin and let it drop onto the counter a few times, like when u are filling up a bottle, say with sand, and you tap it so that it fits better and you can fill more in?

    I always thought the cracks in my butter cakes were because of my rubbish baking skills but seems this is a universal problem XD I have no idea why.

    Let the right one in is an amazing film. It is pretty mature but that’s what makes it awesome (it is very realistic and/or believable too which always helps ). Anyway no more shallow, sparkly rubbish like Twilight :P Oh and the movie is alot different from the book but if you’ve not already read it I do highly reccomend the book (although it is slightly more disturbing at parts and includes some more mature bits that the movie left out) As you can tell I’m hooked on both movie and book. It is rare for something about vampires to be this good…

    I’m going to try steps 2 and 3 for any upcoming baking rounds. It’s only the 5th day of the CNY and I’m already running out of butter cakes!

    Ah I need to figure the new time and temperature that’s needed. Previously each cake was baked for 45 minutes. Maybe I should extend it to an hour so that I can reduce the time. Hmmm..

    Oh man, by calories? Then it’s a fail for me because butter cakes are unhealthier to start with.

    I’m under the impression that “Let the right one in” is not in the same league as Twilight. I feel that it’s probably leans towards either Anne Rice’s vampire series or towards Classics like Bram Stoker’s Dracula.

    I haven’t caught “Slumdog Millionaire” but I’ll consider giving it a try should I spot it in cinema since it’s one of your most uplifting films for the year. But wait, didn’t the year just started? Its only January now, no? :silly:

    Thanks for the information regarding the novel. I thought that it might have been written in Swedish since the movie is in Swedish. I did a book search on my local bookshop’s site and found it. There’s another version of it too but I’ll grab the cheaper one while doing shopping later.

    Twilight is currently the hottest vampire series here too. Bookshops have promised volumes of “Breaking Dawn” and “Eclipse” for the countless Twilight fangirls. It’s amazing how movies make books sell.
